
1. Redbreast 12
Produced with a mash of malted and unmalted barley and then triple distilled in copper pot stills, Redbreast 12 boasts the flavour complexity and distinctive qualities of Pot Still whiskey. This whiskey is matured in Bourbon seasoned American Oak barrels but it is the use of Oloroso Sherry oak butts that provides Redbreast with its signature Christmas cake character.
Full bodied, with notes of raisins, prunes, figs and nuts. The world famous Redbreast sherry style is a staple of Irish whiskey.

2. Auchentoshan Three Wood
This award-winning Lowland single malt whisky has been matured in three different cask types.
It is aged in American Bourbon casks, which is followed by Spanish Oloroso Sherry casks – and then, finally, Pedro Ximenez Sherry casks. The end result is a rich, complex whisky with toffee and sherry flavours.
After being aged for 16 years in both American Oak casks and seasoned Sherry butts, this expression carries a memorable depth and complexity. Warm and fruity notes combine brilliantly with an enticingly spicy sweetness.
After initially being matured in European oak sherry casks and new oak casks, this whisky is then mellowed in Glenfiddich’s unique handcrafted Solera Vat, a large oak tun inspired by the sherry bodegas used in Spain and Portugal. The distinctive warm and spicy flavour profile created by this process has helped this whisky become the first 15 year old expression to break into the top ten best selling single malts.
Read as ‘Rare Cask’ in Gaelic, Casg Annamh is produced from a limited number of meticulously selected Oloroso Sherry oak casks. These casks impart substantial changes to the flavour profile of the spirit by bringing distinctively sweet and rich notes that are associated with Sherry oak.
