Under the watchful eye of the Master Distiller, the liquid is initially matured in American white oak ex-bourbon casks. This gives its first base of soft vanilla and honey notes. A proportion of the liquid remains in American white oak ex-bourbon casks whilst the balance is apportioned between the finest Gonzalez Byass sherry casks which have previously contained 30 year old Matusalem oloroso sherry and Cabernet Sauvignon wine barriques. The three styles are then expertly brought together, perfectly combining their unique characteristics and flavours.
