Pike Creek’s distinct character, complexity and flavour comes from the maturation process, which takes place in a dramatically shifting northern climate. In sub-zero winters, the barrels contract and during the searing summers, they expand. After 10 years of ageing in a non-climate controlled warehouse, the whisky is finished in rum barrels. The result is a whisky with an exceptionally full and robust body along with a complex palate with notes of peppery spice, toffee and dried fruits.
